Applesauce 'til my eyes are crossed

One of the great things about living in Idaho, is that a lot of the produce (when it is in season) is dirt cheap.  I got 2 bushels of apples for $30.  Now that's a whole bunch of apples (think 2 large laundry baskets running-over-full).  And they were nice, meaty apples.  I stored them in the mud room where it is nice and cool, so they'd keep as long as possible.  I used them in school lunches until the poor kids couldn't look at 'em anymore.  

I decided to can them.  Originally, I had intended to make apple pie filling.  It's quick and easy.  But, the apples had gotten too soft.  So applesauce it was.


Yep, count 'em.  27 quarts.  

I did that.  

All by myself.

And my back payed for it for a week.
